Head Chef – Thai Cuisine – Dublin

Excel Recruitment is currently recruiting an experienced Head Chef for our client’s busy Thai restaurant operation in Dublin. This is an exciting opportunity for a talented and passionate chef with extensive experience in Thai cuisine to take ownership of the kitchen, lead a high-performing team, and deliver an authentic, high-quality Thai food offering.

Salary: €80k – €85k

Responsibilities:

• Lead the day-to-day operation of the kitchen, managing and developing the team while ensuring smooth and efficient service
• Prepare, cook, and oversee the production of authentic Thai dishes, maintaining exceptional standards of flavour, quality, portioning, and presentation
• Develop and enhance menus, introducing new dishes and seasonal offerings while maintaining the authenticity of the restaurant’s Thai food offering
• Manage kitchen operations including food preparation, stock ordering, supplier coordination, food costs, waste control, and overall kitchen profitability
• Train, mentor, and support chefs and kitchen staff, ensuring consistency in recipes, preparation methods, and cooking standards
• Maintain the highest standards of HACCP, food safety, hygiene, and health & safety throughout all kitchen operations

Requirements:

• Previous experience as a Head Chef, Senior Sous Chef, or experienced Thai Chef, with strong hands-on Thai cuisine experience essential
• Excellent knowledge of authentic Thai cuisine, including traditional ingredients, flavours, preparation methods, and cooking techniques
• Proven experience leading and developing a kitchen team within a busy, high-volume restaurant or food operation
• Strong commercial understanding, including food costing, stock management, waste control, ordering, and kitchen profitability
• Excellent knowledge of HACCP, food safety, hygiene, and kitchen health & safety requirements
• Passionate and creative approach to Thai food, with excellent organisational skills and the ability to maintain consistency and quality in a fast-paced environment
