Baker – Supermarket – Bray, Co. Wicklow

Excel Recruitment is currently recruiting an experienced Scratch Baker for our client’s busy supermarket in Bray, Co. Wicklow. This is an excellent opportunity for a skilled bakery professional with strong scratch baking experience to join a successful retail operation, producing a high-quality range of fresh breads and bakery products from scratch.

Salary: €40k – €43k

Responsibilities:

• Prepare and bake a wide variety of breads and bakery products from scratch to consistently high standards
• Carry out the full bread production process, including mixing, proving, shaping, finishing, and baking
• Manage daily bakery production schedules to ensure excellent freshness, quality, and product availability
• Monitor stock and ingredient levels while controlling production and waste in line with customer demand
• Maintain excellent standards of cleanliness and ensure full compliance with HACCP, food safety, and hygiene procedures
• Support the development of new and seasonal bakery products while working with the wider team to achieve sales, quality, and waste targets

Requirements:

• Previous experience working as a Scratch Baker within a supermarket, retail bakery, independent bakery, or similar environment
• Strong scratch bread baking experience is essential, with confidence across mixing, proving, shaping, and baking
• Excellent knowledge of bakery ingredients, dough preparation, traditional baking techniques, and bakery equipment
• Strong understanding of HACCP, food safety, and hygiene procedures
• Ability to manage daily production efficiently while maintaining consistently high standards of quality and presentation
• Genuine passion for baking with a reliable and flexible approach, including availability for early mornings and weekends
