Head Butcher – Supermarket – Cork

Excel Recruitment is seeking an experienced Head Butcher to lead the butchery department of a busy supermarket in Cork.

This is an excellent opportunity for an experienced butcher looking to take ownership of a department at an exciting time for the business. The store is due to commence a multi-million-euro revamp within the coming months, with significant investment planned across the supermarket.

The successful candidate will have the opportunity to lead and develop the butcher counter, drive standards and sales, and play an important role in the continued growth of the department.

Key Responsibilities

• Take overall responsibility for the day-to-day running of the butcher counter
• Lead, support and develop the butchery team and counter assistants
• Prepare, cut and present a wide range of high-quality meat products
• Drive sales, margin and profitability across the department
• Manage ordering, stock levels, availability and waste
• Ensure excellent merchandising and presentation standards
• Maintain the highest standards of food safety, HACCP, hygiene, traceability and labelling
• Deliver excellent customer service and provide expert advice on cuts, portion sizes and cooking methods
• Identify opportunities to develop the range and grow department sales
• Support the department through the upcoming store revamp and ensure consistently high standards throughout the transition

Experience & Qualifications

• Previous supervisory, senior butcher or Head Butcher experience is highly desirable
• Recognised butchery qualification such as QQI Level 5/6 in Meat Processing or Butchery, completed apprenticeship or equivalent
• Strong time-served butchers with extensive practical experience will also be considered
• Excellent knowledge of HACCP, food safety, temperature control, traceability and labelling
• Strong commercial awareness with an understanding of stock, waste, margin and sales
• Confident leadership and communication skills
• Passion for quality products and excellent customer service
