Our client is a well-established 4-star hotel in Galway with a strong reputation for quality food and a well-run kitchen. With a busy mix of restaurant dining, bar food, and events, the kitchen offers a great balance of pace, variety, and structure – ideal for a chef looking to grow their experience in a stable, professional setting.
This is an excellent opportunity for a strong Chef de Partie or developing Sous Chef who is ready to step into a broader role and gain exposure across multiple service styles, without the pressure of a purely senior leadership position.
The Role
This is a hands-on Sous Chef role where you’ll be involved in all aspects of a busy kitchen – from prep and service to organisation, team support, and day-to-day operational flow.
You’ll work closely with an experienced Head Chef, gaining valuable insight into how a high-performing hotel kitchen operates, while continuing to develop your own skills across restaurant, bar, and banqueting service.
This role offers a great balance of responsibility and support, making it ideal for someone stepping up or looking to strengthen their all-round ability.
What You’ll Be Doing
- Support the smooth day-to-day running of a multi-outlet hotel kitchen
- Work across restaurant, bar, and banqueting service, building a well-rounded skillset
- Prepare and deliver dishes to a high standard, with a focus on consistency and quality
- Take ownership of sections during service while supporting overall kitchen flow
- Assist during busy periods, helping to keep service organised and efficient
- Work closely with the Head Chef on menu updates, specials, and seasonal changes
- Support junior team members and contribute to a positive, team-focused environment
- Assist with stock control, ordering, and minimising waste
- Maintain high standards of hygiene, HACCP, and kitchen organisation
- Step up when required, gaining confidence in a more senior role
What We’re Looking For
- Experience as a Chef de Partie, Senior CDP, or Junior Sous Chef
- Someone ready to take the next step or consolidate their Sous Chef experience
- A chef who enjoys working across different service styles (not just one outlet)
- Passion for fresh food and delivering consistently good dishes
- A positive attitude and strong team mindset
- Ability to work in a busy but well-structured kitchen environment
- Willingness to learn, take feedback, and continue developing
