Head Chef

€55000 - €65000 Hotel & Catering Galway

Excel Recruitment is currently recruiting for a Head Chef for a beautiful 4-star Hotel just outside Galway city. This role requires a motivated & ambitious candidate with 5+ years of previous experience managing a busy property.

Responsibilities as a Head Chef:

  • Overall accountability for the kitchen’s daily operations.
  • Liaising with the relevant companies for food orders using procure wizard.
  • Evolving menus to meet trends.
  • Interviewing and hiring new staff. Build rosters to align with demand.
  • Maintaining/raising the food’s profit margins.
  • Monitoring and controlling stock levels.
  • Implementation of HACCP/ health and safety procedures in the kitchen.
  • Estimating costs and ensuring all purchases come within budget.
  • Taking care of the kitchen’s accounts on procure wizard and creating a work roster.
  • To manage the training, induction, and development of the kitchen brigade when required using Flow as a guiding technology.
  • To ensure that in the preparation and presentation of food, the highest standards are always maintained.
  • To keep the Owners appraised of any problems within the Kitchen. These would include staff, HACCP, Health & Safety, equipment, and any other areas connected with the Kitchen organisation.
  • To work towards and ensure a positive relationship exists between the Restaurant/Banqueting and the Kitchen.
  • To constantly focus on guest care and service. Ensuring that everything that is done will improve and enhance the guest experience.
  • To be fully conversant with the menu and to be adaptable to continual changes to ensure that the menu is kept in line and developed with customer demands and company policies.
  • Attend any necessary training sessions or meetings.
  • Ensure that all appliances, fixtures, and fittings are safe and work in accordance with Health & Safety regulations.

Requirements for a Head Chef:

  • Previous experience as a Head Chef in a similar role.
  • Good organisational skills and ability to work as part of a team in a busy environment.
  • Full knowledge of HACCP.
  • Good standard and comprehension of English.
  • Full working rights in Ireland.
