Bakery Manager – Dublin South

Excel Recruitment is currently recruiting a Bakery Manager for our client’s busy supermarket in South Dublin. This is an excellent opportunity for an experienced fresh food professional to take ownership of a thriving fresh food operation, with a particular focus on overseeing and developing the store’s bakery department.

Salary: €40k – €42k plus Bonus

Responsibilities:

• Oversee the day-to-day operations of the bakery department, ensuring the highest standards of quality, freshness, and presentation
• Take responsibility for the bakery department, driving product quality, availability, and sales performance
• Lead, train, and develop fresh food teams, fostering a positive and high-performing working environment
• Manage stock control, ordering, waste reduction, and margin performance across fresh food areas
• Ensure full compliance with HACCP, food safety, and health & safety regulations
• Monitor department sales and identify opportunities to improve profitability and customer engagement
• Work closely with store management to implement promotions, seasonal ranges, and fresh food initiatives
• Maintain excellent merchandising, cleanliness, and operational standards throughout all fresh food departments
• Support recruitment, training, and performance management of team members
• Deliver an outstanding customer experience through exceptional fresh food standards and service

Requirements:

• Previous experience as a Fresh Food Manager, Bakery Manager, or senior fresh food supervisor within a supermarket or retail environment
• Strong understanding of bakery operations and experience overseeing bakery production or bakery teams is highly desirable
• Excellent knowledge of HACCP, food safety, stock control, and fresh food management
• Proven ability to achieve sales, margin, and waste control targets
• Strong leadership skills with experience motivating and developing teams
• Customer-focused with a passion for fresh food retail and maintaining high standards
• Ability to manage multiple departments within a fast-paced retail environment
