Chef de Partie – Hotel Kitchen – Kilkenny City

We are currently recruiting a Chef de Partie for a well‑established hotel in Kilkenny City. This is an excellent opportunity for an experienced Chef de Partie, or a strong Commis Chef ready to step up, to join a busy, professional hotel kitchen with a strong reputation for food quality and service.

This role is ideal for a passionate hotel chef who takes pride in delivering high‑quality food, enjoys working as part of a structured kitchen team, and is keen to develop their career within a supportive hotel environment.

As Chef de Partie, you will work closely with the Head Chef and Sous Chef, supporting the delivery of food across breakfast, lunch, dinner, bar food, and banqueting, while maintaining consistently high standards of presentation, flavour, and food safety.

Key Responsibilities

  • Prepare, cook, and present dishes to a consistently high standard in a hotel kitchen environment
  • Work across all sections including breakfast, restaurant service, bar food, and banqueting/events
  • Take full responsibility for your assigned section during service
  • Ensure excellent portion control, flavour consistency, and presentation at all times
  • Complete daily prep lists and ensure mise en place is fully organised and service‑ready
  • Support smooth and efficient kitchen operations during busy service periods
  • Assist with training and mentoring junior kitchen staff when required
  • Maintain strict adherence to HACCP, hygiene, and food safety standards
  • Keep all workstations clean, organised, and compliant with food safety regulations
  • Complete daily temperature checks and required kitchen documentation
  • Support the Head Chef and Sous Chef in achieving kitchen targets and standards
  • Work collaboratively with the kitchen team to promote a positive, professional work culture
  • Provide support to other sections when required to ensure smooth hotel operations
  • Assist with stock rotation, labelling, storage, and inventory control
  • Help minimise food waste and support cost‑control measures
  • Report equipment issues or stock shortages promptly

Requirements

  • Previous experience as a Chef de Partie, or a strong Commis Chef ready for promotion
  • Experience in a hotel kitchen or high‑volume restaurant is highly desirable
  • Strong culinary skills with excellent attention to detail
  • Ability to work efficiently under pressure in a fast‑paced kitchen environment
  • Good working knowledge of HACCP and food safety regulations
  • Reliable, positive, and team‑focused attitude
  • Strong communication and organisational skills
  • Passion for food, learning, and delivering excellent guest experiences
  • Ability to maintain high standards during busy service periods
