We are recruiting on behalf of our client, a well‑established hotel in Kilkenny, for an experienced and motivated Head Chef to lead the kitchen team and oversee all culinary operations. Key Responsibilities
- Kitchen Leadership & Team Management
- Lead, motivate, and train the kitchen brigade to deliver consistent quality.
- Foster a positive, collaborative, and high‑performance kitchen culture.
- Create rotas, manage staffing levels, and oversee performance development.
- Maintain excellent communication with hotel management and FOH teams.
- Kitchen OperationsOversee the smooth running of all kitchen operations, including breakfast, lunch, dinner, and event services.
- Ensure the highest standards of food quality, presentation, and consistency.
- Maintain a clean, safe, and organised kitchen environment.
- Design seasonal menus reflective of hotel standards and guest expectations.
- Introduce new dishes and concepts to enhance the hotel’s food offering.
- Ensure accurate allergen management and dietary accommodations.
- Manage food costs, GP margins, portion control, and waste reduction.
- Oversee ordering, purchasing, stock control, and supplier relationships.
- Ensure strong budget awareness and operational efficiency.
- Uphold all hygiene and safety standards in line with HACCP regulations.
- Conduct regular checks, audits, and staff training sessions.
- Ensure all kitchen documentation, cleaning schedules, and procedures are up-to-date.
Requirements
- Previous experience as a Head Chef or a strong Sous Chef ready to step up.
- Experience in a hotel kitchen or high‑volume hospitality environment.
- Formal culinary training is an advantage but not essential for the right candidate.
- Strong leadership, communication, and organisational skills.
- Creative and confident in menu development.
- Excellent understanding of cost control, ordering, and stock processes.
- Thorough knowledge of HACCP and food safety requirements.
- Ability to work well under pressure and lead by example.
- Passionate about hospitality and delivering exceptional guest experiences.
